Today is the second day of Easter in the Netherlands and a national holiday. The Netherlands is not as religious as the US but keeping tradition is part of the society. The country has been enjoying a summer weather since last week and people were flocking to the beaches yesterday to enjoy the weather before it gets cooler again.
Since it’s nice and warm today, I made Yum Salad for lunch to cool me down. I’ve been eating a great deal of salad of various kinds, mostly with vinegar and olive oil dressing due to preference. But now and then I like to make the sweet and sour Lao salad with egg dressing.
