Tom Khem (Sweet Salted Pork Stew) for lunch in Vientiane, Laos. Aunt Phone likes to put bamboo shoots in Tom Khem and said it is quite delicious with hard boiled eggs or without. She normally uses fresh bamboo shoots in the stew. Aunt Phone was given some dried bamboo shoots from her friend and decided to add it in her Tom Khem. She said it’s delicious this way also and would use dried bamboo shoots when she doesn’t have fresh kind in the house.
Tom Khem is good with either warm sticky rice or Jasmine rice and your favorite Jeow (dipping sauce).
