Mixed cooked vegetables, a sort of warm salad, country style. Soup Phak is dish is made of steamed vegetables based on what’s available throughout the year. The warm salad is seasoned with roasted chili peppers, Lao galanga, ginger, shallots, salt, fish sauce, or fermented fish sauce (padek), and top with green onion, coriander (cilantro) and roasted sesame seeds.
I love eating Soup Phak with freshly steamed sticky rice for breakfast, lunch, or dinner. My favorite ingredients in the warm salad are string beans and water spinach.
