Dinner in Pakse, Laos with Soup Phak Sai Hoy (warm mixed vegetable salad with shellfish). My aunt Phet selected various vegetables that are in season at the moment for the salad. One ingredient that is unique to this type of salad is the mushroom that is steamed before slicing into bite size pieces. I can’t recall the name of this mushroom in either Lao language or English but I love eating it in the warm salad.

My father is from Pakse and he often made this dish for us when we were living in Vientiane, Laos. We helped him by picking out the shellfish for the salad and picking vegetables from the garden. It’s even more delicious than the plain Soup Phak with freshly cooked sticky rice.
