Soop Hoy (Spicy Shellfish Salad) for lunch in Vientiane, Laos. This is like a warm salad made of cooked shellfish with herbs, spices, and string beans. As a true Tai Pakse, Aunt Kiane and Aunt Phone love to make this dish and would tell me stories of how they used to pick Hoy or shellfish as a little kid on their rice paddy or river streams in Pakse.

I haven’t eaten this salad for years and can’t remember the taste of it. I should ask Aunt Kiane or Aunt Phone how to make Soop Hoy and use Bulot (sea snail), which is called Wulken in Dutch for the typical hoy of Laos.
