I also used the cooked shrimps for the Chicken and Shrimp Fresh Spring Rolls to make Shrimp Cucumber Rolls as an experiment using the same ingredients that would go in to a Shrimp Fresh Spring Rolls.
I find Shrimp Cucumber Rolls to be refreshing and an alternative to using rice paper to wrap up the ingredients. The dipping sauce is the same sweet and sour sauce for the Fresh Spring Rolls. Shrimp Cucumber Rolls make a great addition to Chicken and Shrimp Fresh Spring Rolls.
I used two shrimps for each Shrimp Cucumber Rolls, one on top and one on the bottom. The size of the cucumber slice is big enough for two big bites. Next time I will make peanut sauce or buy one to test out with Shrimp Cucumber Rolls.
