Check out the notorious Tum Seripap (ຕຳເສລີພາບ) or Seripap Salad made with love and care at Seripap Garden Restaurant. The secret ingredient is shredded green papaya deep fried in batter nice and golden before adding to the tum.
The salad is gently smashed or tossed around using the old fashion pestle and mortar. Each tum is specially made to order depending on your taste, some like it hot, some like it sweet, some like it sour, some like it salty or any combination.
I’m going to attempt to re-create this dish in my kitchen and will leave out some of the ingredients or use tofu sausage as substitute for the hot dog.
