The chicken is roasted is the same process as “pig roast” in open fire, turning constantly until fully cooked. The mushroom dip is also made by roasting or grilling over the charcoal along with chili pepper, garlic, and green onion. The ingredients are then pounded together using mortar and pestle, seasoned with salt, MSG, and fish sauce.
