Rice Stick Noodle Soup with Chicken

I don’t like to eat meat and would only eat beef or pork a few times a year. I do eat chicken once or twice a week next to seafood and like to make Rice Stick Noodle Soup with chicken (Feu Kai) when the weather is cool or on a rainy day.

It takes less time to make the chicken broth comparing to beef broth. I can use the same broth to make Khao Piak as well. I bought a free range chicken for the soup and used half of the chicken breast in each bowl of Feu.
