Having Purple Eggplant Chutney (Jeow Mak Kheua) for breakfast with the merchants and traders at the Morning Market, in Luang Prabang, Laos.
We boiled some water spinach (Phak Bong) to go with the Purple Eggplant Chutney (Jeow Maak Kheua; ແຈ່ວໝາກເຂືອ).
It was a simple but delicious meal with freshly cooked sticky rice (glutinous rice), pork rind, coriander (cilantro), and Piper sarmentosum leaves (phak i leut or pak eelerd; ຜັກອີ່ເລີດ) on the side.
