Eggplant chutney, Jeow Maak Kheua (ແຈ່ວໝາກເຂືອ) or Pheuy Maak Kheua is one of my favorite Lao food dish to have for breakfast as a little kid in Laos. This dish can be make using small and round eggplant or purple eggplant.
How to make Jeow Mak Keua
For this particular morning it was Jeow Maak Kheua Hum Ma or Purple Eggplant Chutney, made by my aunt for breakfast.
It’s a simple but delicious meal, served with warm sticky rice, sliced cucumber and dill on the side. I will choose this for breakfast over a bowl of cereal with milk any day of the week. 🙂
