Lao Green Papaya Salad with Raw Crab (Tam Maak Hoong Sai Kapou Dip; ຕໍາໝາກຫຸ່ງໃສ່ປູດິບ) bought from Kok Pho Market (Talat Kok Pho; ຕະຫຼາດກົກໂພ) for lunch in Vientiane, Laos.
My favorite Tam Maak Hoong seller has no cooked crab for today. She added the raw crab from the raw padek or fermented fish sauce bucket. The papaya salad itself has no garlic and no MSG and used cooked padek and crab paste.
There were roasted chicken, soured pork (Som Moo; (ສົ້ມໝູ), pork rind, and vermicelli rice noodle or khao poon noodle (ເຂົ້າປຸ້ນ) for side dishes with the papaya salad.
I was too afraid to eat it and only took photos mostly since I saw a few raw crabs crawling around in a bucket of raw padek or fermented fish sauce!
