During the last three weeks in Laos I didn’t get to eat Lao Green Papaya Salad on a daily basis. I went without green papaya salad for like six weeks before I started eating it again in Luang Prabang. My plan was to have it for lunch everyday while I was in Luang Prabang and later in Vientiane but the plan didn’t turn out the way I wanted with such heat and humidity and I was not hungry at all for food and only had cravings for fruits and water.
Now that I am back in Holland, I went grocery shopping on the second day after my returned and made my self some Lao green papaya salad and shredded the papaya the way some people do it in Luang Prabang. I bought myself a new knife in Vientiane and tested it out by shredding the papaya in a big thin slice. I need more practice and maybe get a different knife the next time I am in Laos.
