Pakse Style Khao Nom Kok (Pakse Coconut Cakes) for lunch in Vientiane, Laos. My Aunt Phone made the grilled coconut cakes with minced pork fillings. As an experiment, she also added pandan leaf extract in the batter. In the past, my aunt made the coconut cakes in plain white color (the color of the flour).
I suggested to her to add the pandan leaf extract in the batter because I like the smell of the it.
My other Aunt Kian made the sweet and sour peanut dipping sauce to go with the savory coconut cakes. It’s such a hearty meal that after a few pieces, we were all full.
