Orm Hoy for lunch in Vientiane, Laos. Orm Hoy (ອອ່ມຫອຍ; อ่อมหอย) is roughly translates as shellfish stew or soup. During certain months of the year my cousins in Pakse would go look for Hoy (shellfish) in the rice paddies and collect them for my aunt to make a stew.
In Vientiane, my other two aunts would buy the shellfish from a local market. They usually spend a great deal of time cleaning the shells before cooking them.
Orm Hoy is quite delicious and fun to eat with Spicy Dipping Sauce (Jeow Som; ແຈ່ວສົ້ມ) and warm sticky rice.
