Nam Varn Mor Noy for ( ນ້ຳຫວານຫມໍ້ນ້ອຍ ) dessert in Vientiane, Laos. I don’t know the name of Mor Noy in English. But it’s a green gelatin like thing made from the juice or extract of the leaves.
The Mor Noy leaves are extracted the same way as extracting Bai Yanang (Yanang leaves). By putting the Mor Noy leaves in a mixing bowl with four to five Yanang leaves (Tiliacora triandra), then using both hands to rub the leaves back and forth until all the green part in the leaves are out in the water.
The Mor Noy juice is then drained and left to settle for a few hours and the result is the green jelly to be used in a dish or dessert.
It is quite refreshing with coconut milk and sugar as dessert. You can also add the jelly in sugarcane drink with or without ice.
