Nam Khao (ແໝມເຂົ້າ; ยำแหนมข้าวทอด) or Lao crispy rice salad, Lao fried rice ball salad, Nam Kao Tod for lunch in Vientiane, Laos. My Aunt Phone likes to make this for a Boun (Lao Festival), birthday party, and any big gathering. She can make a few kilos of the fried rice ball, mix and season with the Soured Pork, and serve to the guests as fresh as possible.
I don’t know how to make Nam Khao but like to eat it once in a while. I asked my Aunt Phone to show me how she makes the dish so I can take pictures and make a video recording of it. The cooking process is not that difficult, it just takes a little bit of time.
