I made Mee Kati for dinner last night to reward myself for the hard work I’ve been doing on Laomusic.la lately. I used organic tofu and champignon mushroom instead of fish or chicken. It would have been a totally vegan dish if I didn’t use two tablespoons of padek next to salt and sugar. I’ve made Tofu and Vegetable Curry before using only salt and curry powder as seasoning and it was quite delicious.
For lunch today, this is what I had, a left-over Mee Kati. I still have enough left for another bowl for dinner. So, no cooking for me tonight.
