Spotted Featherback Fish Tartare (Larb Pa Tong; ລາບປາຕອງ) and Spotted Featherback Fish Soup (Kaeng Pa Tong; ແກງປາຕອງ) for lunch in Vientiane, Laos.
We bought the fish from the market at the outer skirt of Vientiane. My Aunt made the Larb Pa Tong Pakse version, which is without roasted round white or green eggplants.
There was also a soup made from the fish head, tail, and bone with cherry tomato and green onion flower.
It was a delicious lunch with freshly steamed sticky rice (Khao Niao; ເຂົ້າໜຽວ), Phak Kadow, Phak Samek, Phak Kadon, Fish mint, and round green eggplant on the side.
