I like to make Lao mango salad now and then using young green mango. For this particular salad I used chili peppers, shrimp paste, sugar, and fish sauce for the dressing.

A recipe would normally calls for a clove or two of garlic but since I am allergic to it, I don’t use it in the salad.

After pounding the chili peppers, shrimp pate and sugar in the mortar, I added two tablespoons of fish sauce into the mix, then added one shredded green mango and lightly pound and toss the ingredients together.

This make a great afternoon snack and when the green mango is not sour enough I would add fresh squeezed lime juice into the mix to give it an extra kick.
