Kaeng Nor Mai for lunch in Vientiane, Laos. In English, it’s known as Bamboo Shoot Soup. I like my Kaeng Nor Mai plain, meaning no fish or meat like pork added in the soup. I prefer plenty of vegetables and herbs in the soup depending on what’s available and in season at certain time of the year.
For this particular day I told my two aunts about my grandmother’s Kaeng Nor Mai and how she would asked me to go pick some herbs in her garden to put in the soup and Fermented Fish Dipping Sauce (Jeow Padek ແຈ່ວປາແດກ).
My two aunts decided to make Jeow Padek to go with Kaeng Nor Mai. Although it’s not the way my grandmother used to make, it was delicious enough. I enjoyed the Bamboo Shoot Soup and dipping a ball of sticky rice in the Jeow Padek and thought of my deceased grandmother.
