There are many types of Jeow ( dipping sauce ) to accompany a Lao traditional meal. Many Lao people I know must have some sort of dipping sauce to go with the main dish. My Aunt Kian said she doesn’t feel full if there is no Jeow to go with the sticky rice. There’s a saying with my relatives in Pakse that all you need is sticky rice and jeow and you can last all day working in the rice field.

Jeow Phak Ekou is a dipping sauce that my father and my aunts from Pakse like to make. They make it so often that I have an impression that this is a southern thing.
