My aunt likes to make the spicy eggplant chutney for breakfast once a week because it’s easy to make right after steaming the sticky rice. Tilapia fish is widely available all over the country, thanks for many fish farms in Vientiane Province. The deep fried fish goes well with the spicy eggplant chutney, fresh vegetables on the side, and warm sticky rice.
