Happy Thanksgiving to those of you that are celebrating this special day. I couldn’t be with my family today for the annual Thanksgiving dinner but called my mother and told her of my dinner plan. She was busy cutting up green beans for Khao Poon and shredding cucumber for salad.
My younger brother doesn’t want to eat turkey this year so my mother made Khao Poon for lunch along with spicy cucumber salad to go with three roasted chickens made by a friend of the family. Then for dinner she was making Yum Salad and Bamboo Shoot Soup to take to my uncle’s house for a big Thanksgiving feast. There will be turkey with all the trimmings and pumpkin pie, pecan pie, and of course Lao desserts. For Lao people, to day is just another day for family to get together and share various Lao food dishes. Whatever you are having, I hope it’s delicious!
