Green mango (ໝາກມ່ວງ) for afternoon snack in Vientiane, Laos. My friend Fong gave me some young green mangoes from his garden and I decided to make Fermented Fish with chili dipping sauce (Jeow Pade Wan ແຈ່ວປາແດກຫວານ) to go with the sliced green mangoes.
I wanted to make a video clip and take photos for my Lao Food Blog and the only type of Padek at my aunt’s house was raw kind with tiny shrimps mix with the fish.
The dipping sauce I made was quite simple. I mixed fermented fish sauce or Padek with sugar, chili peppers, shallots, and ground roasted sticky rice. My cousin made another dipping sauce and added extra two ingredients that most Lao people love to have in their fruit dip sauce, which is no other than MSG and chopped garlic.
