Cockle Wrap or Phun Hoy Khaeng (ພັນຫອຍແຄງ) for dinner on Sunday night. I made Chicken and Prawn Fresh Spring Rolls as appetizer and Cockle Wrap for the main meal.
I went to a Fish and Seafood Shop in Rotterdam and bought these fresh caught cockles from France. If I was eating Phun Hoy Keng in Laos there would be Khao Poon or Rice Vermicelli Noodle cut up in short pieces as part of the wrapping ingredients.
Since I was the only person eating Cockle Wrap (Phun Hoy Khaeng ພັນຫອຍແຄງ) with plenty of cockles, there was no need to cook rice vermicelli to ensure that I would be full afterward.
The left-over didn’t go to waste and even more enjoyable the next night.
