The weather has been really nice the last few days and it feels like summer already. On a warm day I like to have salad or fresh spring rolls for a meal.

So, for dinner last night it was Chicken and Shrimp Fresh Spring Rolls, Yor Dip or Yor Khao (Yor Dip ຢໍ່ດິບ; Yor Khow ຢໍ່ຂາວ) in Lao language. I steamed the chicken and sprinkle a little bit of Maldon Sea Salt on the chicken strips. I cooked the shrimps in oyster sauce with no oil added.

The dipping sauce is sweet and sour using sugar, salt, fish sauce, soy sauce, lime juice, and oyster sauce. Crushed chili pepper and crushed roasted peanuts were added to the sauce before serving.

I used only vegetables and herbs for the roll and didn’t use rice vermicelli noodles because it’s too heavy. Steamed chicken and shrimps are enough for the rolls with plenty of herbs and vegetables I can say it was a light dinner.
