Kaeng Pa Douk Kup Hed (Catfish and Mushroom Soup) for lunch in Vientiane, Laos. Some people might find it strange to see tomato in clear soup but my aunts like the soup to be a little bit sour. They tend to add tomato to their soup and even to stir-fry dishes. Aunt Kiane bought plenty of oyster mushroom (Hed Nang Lom) for the soup and to steam as a side dish. The steamed mushroom and vegetables went really well with Jeow Mak Kork and the fish soup.
I have not eaten Jeow Mak Kork for many years. I could imagine myself dipping a ball of freshly cooked sticky rice into the Jeow and take a bite of a steamed mushroom and take a sip of that delicious fish soup.
