I eat a simple breakfast and lunch and it’s usually fruits with soy milk for breakfast and peanut butter and jelly sandwich for lunch, or more fruits and soy milk for lunch. Now and then I do grab a grilled chicken sandwich at a restaurant cafe. But my daily meals are quite simple, at least that’s what I think of it anyway.

When cooking for one, I don’t spend a great deal of time in the kitchen. Ping Kai (Lao bbq chicken) and Jeow Mak Len (spicy tomato chutney) with sticky rice is a good enough dinner for me. I can always “pig out” when I go to Laos.
