Bamboo Shoot Soup with Sweet Peppers (Kaeng Nor Mai with Makphet Wan) for lunch in Vientiane, Laos.

Aunt Kian added a bit of dried bamboo shoot soups for contrasting texture and taste. When bamboo shoot is not in season you can buy the dried kind to make soup. This version of the soup has sweet peppers instead of mushroom, Sponge Gourd, or pumpkin. It’s delicious in its own way and served with warm sticky rice and Jeow Makphet (spicy dipping sauce).
