Homemade Bamboo Shoot Soup (Kaeng Nor Mai) with pumpkin, made by my aunt for lunch in Vientiane. It’s a plain soup with no meat or fish and only chunks of pumpkin, sweet pepper and top off with rice paddy herb (phak kayang).

The bamboo shoot soup was served with chili dipping sauce (Jeow Mak Phet) and plenty of fresh steamed sticky rice (Khao Niao).

When my mother makes Bamboo Shoot Soup with pumpkin, she likes to add a handful of pumpkin blossoms to the soup as well.
