Kaeng Nor Mai (Bamboo Shoot Soup) with pork for lunch in Vientiane, Laos. It’s quite difficult to find fresh bamboo shoot at one of the market in the center of Vientiane at the moment. A relative at Ban Lat Khouay went to pick the bamboo shoots on her land and boiled them for us.
All my aunt had to do was to make the bamboo shoot soup with bai yanang extract, pork, pumpkin, and adding phak kha for the finishing touch. I’m not a fan of phak kha and it smells stinky to me but my father and all of his relatives from Pakse love to eat it. I’m still trying to get used to the smell of it and prefer to have lemon basil in the soup.
